Homemade BOMBALICIOUS chicken salad anyone?

My kids LOVE the store made rotisserie chickens so I thought I would make one myself for sake of just being able to make it, PLUS, I’m sure mine is healthier with an all natural chicken (could not find organic and even then, its a bit too spendy). I know what has gone into mine and it only took me 1 hour and 30 minutes total. SO easy, your head will spin and you will be addicted to making your own rotisserie chicken because the amount of meat you get off it will feed a family of 4 for 3-4 meals!! Options for eating this clean eating chicken salad:
– Wheat pita pocket
– Healthy crackers (about 6-8 depending on the size)
– Wrapped in a big cabbage or romaine lettuce leaf
– In a spinach tortilla
– With a fork in a bowl 😉
1 cup rotisserie chicken
1/2 cup grapes, sliced (apples chopped small work great too)
1/2 cup cucumber, chopped
1 tbsp sunflower seeds
2 tsp lemon juice
1/3 cup red pepper hummus OR plain greek yogurt (Both of these gift it a completely different flavor – -be sure to try them both!)
Seasonings: Just a few dashes of each will do; black pepper, lemon pepper, paprika, garlic powder, dash of garlic sea salt
